  • Salt and freshly cracked black pepper to taste
  • 1 tablespoon fresh parsley or chives, chopped (optional)
  • Optional extras: diced tomatoes, avocado slices, or hot sauce for serving

Instructions

  1. Heat skillet over medium heat. Cook bacon strips 4 to 6 minutes per side until crispy. Drain on paper towels, leaving 1 tablespoon bacon fat in pan.
  2. In a mixing bowl, whisk together eggs, milk, salt, and pepper until pale and frothy (about 1-2 minutes).
  3. Butter each bread slice lightly on both sides. Toast in toaster or oven at 350°F (175°C) for 3 to 5 minutes until golden and crisp. Keep warm.
  4. Heat skillet over medium-low heat. Add butter if needed. Pour in egg mixture. Let sit 20 seconds, then gently stir and fold eggs slowly to form soft curds.
  5. When eggs are nearly set but still slightly runny, sprinkle shredded cheddar cheese on top and let melt for 30 seconds.
  6. Place toasted bread on plates. Top each slice with cheesy scrambled eggs and add two bacon strips on the side.
  7. Garnish with chopped parsley or chives if desired. Serve with optional diced tomatoes, avocado slices, or hot sauce.

Notes

Cook eggs on medium-low heat to avoid rubbery texture. Save a tablespoon of bacon fat for cooking eggs for extra flavor. Butter bread before toasting for a golden crust. Remove eggs from heat just before fully set and finish cooking off the stove to keep them fluffy. Store leftovers in airtight container for up to 2 days and reheat gently.
