  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt, plus more for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Make the apple filling: In a large bowl, combine sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until evenly coated. Let sit for 5 minutes.
  3. Make the oat topping: In a medium bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Using your fingers or a pastry cutter, work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining.
  4. Make the salted caramel sauce: In a small saucepan over medium heat, melt the butter. Add brown sugar and cream, whisking constantly. Bring to a gentle boil, then cook for 2-3 minutes, whisking occasionally, until thickened slightly. Remove from heat and stir in vanilla and flaky sea salt. Set aside to cool slightly.
  5. Assemble the crisp: Spread the apple mixture evenly in the prepared baking dish. Drizzle about half of the salted caramel sauce over the apples. Sprinkle the oat topping evenly over the apples.
  6. Bake: Place the dish on a baking sheet. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling around the edges. If the topping is browning too quickly, tent loosely with foil for the last 10 minutes.
  7. Finish with caramel: Remove from oven and let cool on a wire rack for at least 10 minutes. Drizzle the remaining salted caramel sauce over the top and sprinkle with an extra pinch of flaky sea salt. Serve warm.

Notes

For best results, use cold butter for the topping and let the crisp rest before serving. The caramel can be made up to a week in advance. For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free flour blend. For a dairy-free version, use plant-based butter and full-fat coconut cream.
