This easy homemade pumpkin spice syrup is made with simple pantry staples and comes together in under 15 minutes. It’s perfect for adding warm, real pumpkin spice flavor to coffee, lattes, oatmeal, and more.

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 3 tablespoons (45g) pumpkin puree (not pumpkin pie filling)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • Β½ teaspoon ground nutmeg
  • ΒΌ teaspoon ground cloves
  • 1 teaspoon vanilla extract (pure)
  • Pinch of salt

Instructions

  1. In a small saucepan over medium heat, combine 1 cup granulated sugar and 1 cup water. Stir gently with a whisk until the sugar dissolves completely, about 2-3 minutes.
  2. Whisk in 3 tablespoons pumpkin puree until mostly combined, about 30 seconds.
  3. Add 2 teaspoons cinnamon, 1 teaspoon ginger, Β½ teaspoon nutmeg, ΒΌ teaspoon cloves, and a pinch of salt. Whisk until fully incorporated.
  4. Bring the mixture to a gentle simmer (small bubbles around the edges). Reduce heat to low and let simmer for 5 minutes, stirring occasionally to prevent scorching.
  5. Remove from heat and stir in 1 teaspoon vanilla extract.
  6. Optional but recommended: Pour the syrup through a fine-mesh strainer into a glass measuring cup or storage jar to remove any pumpkin pulp or spice sediment.
  7. Let the syrup cool completely at room temperature (about 1 hour). It will thicken slightly as it cools. Transfer to a clean glass jar, seal tightly, and refrigerate.

Notes

Don’t skip the straining step if you’re picky about texture. The syrup will be thin when hot but thickens nicely once chilled. For a thicker syrup, simmer for an extra 2-3 minutes. The flavors deepen after a day or two in the fridge. Store in an airtight jar in the refrigerator for up to 2 weeks. Can be frozen in ice cube trays for up to 3 months.
