  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bone-in turkey breast, about 2 to 2.5 pounds
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth or water
  • Optional: fresh herbs for garnish

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Take the turkey breast out of the fridge and let it sit on the counter for about 15 minutes.
  2. In a small bowl, combine the softened butter, minced garlic, dried rosemary, dried thyme, dried sage, salt, and pepper. Mix until evenly distributed.
  3. Pat the turkey breast completely dry with paper towels.
  4. Using your fingers, gently work your way under the skin of the turkey breast to create a pocket between the skin and the meat.
  5. Spread half the herb butter under the skin, massaging it evenly over the meat.
  6. Rub the remaining butter all over the outside of the turkey breast, then drizzle with olive oil and rub it in.
  7. Place the turkey breast in a roasting pan or cast iron skillet, skin side up. Pour chicken broth or water into the bottom of the pan.
  8. Roast for 50-65 minutes, until the internal temperature reaches 165Β°F (74Β°C) in the thickest part.
  9. Remove from the oven and tent loosely with aluminum foil. Let rest for 10-15 minutes before slicing.
  10. Slice against the grain into thick pieces and spoon pan juices over the top before serving.

Notes

Pat the turkey dry before applying butter. Let butter come to room temperature. Use a meat thermometer for best results. If skin browns too quickly, tent with foil. Let turkey rest before slicing to retain juices.
