  • 23 slices Swiss cheese (or cheddar, provolone, gouda)
  • 2 slices hearty bread (sourdough, whole wheat, or brioche roll)
  • 1 tablespoon butter or mayonnaise
  • 1/2 cup cucumber slices
  • 1/4 cup cherry tomatoes, halved
  • 1 small handful grapes or apple slices
  • A few olives or pickles
  • Optional: 2-3 slices salami or turkey
  • Optional: baby carrots or snap peas
  • Optional: small container of mustard or honey for dipping

Instructions

  1. Start with the bread (2 minutes). Lightly toast the bread if desired. Spread a thin layer of butter or mayonnaise on one side of each slice to prevent sogginess.
  2. Layer the ham and cheese (2 minutes). Place ham slices on one slice of bread, folding slightly. Lay cheese on top. Close with the second slice of bread, buttered side down. Press gently.
  3. Slice the sandwich (1 minute). Use a sharp knife to cut the sandwich into quarters or triangles.
  4. Prep the veggies (3 minutes). Wash and slice cucumber into rounds. Halve cherry tomatoes. If using baby carrots, leave whole or cut into sticks. Place veggies in one compartment of the bento box.
  5. Add the fruit and extras (2 minutes). Wash grapes or slice apple. Add to another compartment. Add olives or pickles. If including a dip, fill a small container with mustard or honey.
  6. Assemble the box (1 minute). Place sandwich quarters in the largest compartment. Arrange veggies, fruit, and extras in remaining spaces. Keep wet items separate from dry items. Close lid.

Notes

For best results, pat cucumber slices dry to avoid sogginess. If packing the night before, store sandwich and veggies separately and assemble in the morning. The bento box is best enjoyed at room temperature. For a low-carb version, skip the bread and roll ham and cheese into pinwheels or use lettuce wraps.
