Ingredients

  • Brie cheese, 8 ounces
  • Aged cheddar, 6 ounces, sliced
  • Gouda or smoked gouda, 6 ounces, cubed
  • Salami, 4 ounces, sliced thin
  • Prosciutto, 3 ounces, torn into ribbons
  • Candy corn, 1 cup
  • Chocolate-covered pretzels, 1 cup
  • Dark chocolate squares, 4 ounces
  • Halloween M&Ms or similar candy, ½ cup
  • Pretzel sticks, 1 cup
  • Roasted salted almonds, ½ cup
  • Pumpkin seeds (pepitas), ¼ cup
  • Green apples, 2, sliced
  • Red grapes, 1 cup, washed and stemmed
  • Dried cranberries, ¼ cup
  • Crackers, assorted, about 8 ounces
  • Fresh rosemary sprigs, for garnish
  • Edible glitter or gold dust, optional

Instructions

  1. Prepare your board (2 minutes): Place your cutting board or serving platter on a clean, dry surface. If using a wooden board, rub it lightly with a food-safe mineral oil if it looks dry. Position your small bowls or ramekins in the corners or along the edges of the board. These will hold the loose items like candy corn and nuts.
  2. Place the cheeses (3 minutes): Unwrap your brie and place it whole on the board, slightly off-center. I like to put it at about the 10 o’clock position. Arrange your sliced cheddar in a fan shape next to the brie, overlapping the slices slightly for visual appeal. Cube your gouda and pile it loosely near the center of the board. Leave about an inch of space between each cheese type so they don’t blend together visually.
  3. Add the meats (2 minutes): Fold your salami slices into quarters or roll them into little cones. Arrange them in a small cluster near one of the cheeses, preferably near the gouda. Tear your prosciutto into bite-sized ribbons and drape them loosely, almost like little waves, in another empty spot. Don’t stack the meats too neatly—a slightly messy look feels more inviting and rustic.
  4. Fill the bowls (2 minutes): Pour your candy corn into one of the small bowls. Place the chocolate-covered pretzels in another bowl, and the Halloween M&Ms in a third. If you’re using edible glitter, sprinkle a tiny pinch over the candy corn bowl now. Arrange these bowls in the empty spaces on your board, keeping them evenly distributed.
  5. Add the crunchy elements (2 minutes): Scatter your pretzel sticks in a few small piles around the board, pointing in different directions for visual interest. Sprinkle the roasted almonds and pumpkin seeds in the gaps between the larger items. Think of this step as filling in the cracks—you want to minimize empty space without overcrowding.
  6. Arrange the fruit (3 minutes): Slice your green apples just before serving to prevent browning. Fan them out in a small cluster near the cheddar—the sharp apple pairs perfectly with sharp cheese. Place your red grapes in a small bunch, still attached to the stem if possible, near the brie. Sprinkle the dried cranberries in a little trail that connects different sections of the board.
  7. Add the crackers (2 minutes): Arrange your crackers in small stacks or fans around the edges of the board. Don’t spread them evenly—create little clusters that encourage people to reach across the board and explore. I like to place water crackers near the brie, wheat crackers near the cheddar, and buttery crackers near the candy corn for a sweet-salty combo.
  8. Garnish and finish (2 minutes): Tuck fresh rosemary sprigs in between the cheese and meat sections. The dark green adds a beautiful contrast to the orange and black theme. If you have edible glitter, dust a tiny amount over the entire board for a magical, witchy effect. Step back and look at your board from all angles. Adjust anything that looks unbalanced.
  9. Serve immediately or refrigerate (1 minute): This board is best served at room temperature, so if you’ve refrigerated any ingredients, let the board sit out for 15-20 minutes before serving. Cover loosely with plastic wrap if you need to refrigerate it for up to 2 hours before your party.
