Instructions

  1. Peel and slice 4 large peaches into roughly 1/2-inch thick slices. Toss them in a bowl with 1/4 cup brown sugar, 1 teaspoon cinnamon, 1 tablespoon lemon juice, and a pinch of salt. Set aside to macerate for about 10 minutes.
  2. In a separate bowl, combine 1/2 cup rolled oats, 1/4 cup all-purpose flour, and 1 teaspoon cinnamon. Add 4 tablespoons cold, cubed unsalted butter. Mix with fingers or a pastry cutter until mixture resembles coarse crumbs. Stir in 1/2 teaspoon vanilla extract if using.
  3. Tear off four large sheets of heavy-duty aluminum foil (about 12×12 inches). Divide the peach mixture evenly among the foil sheets, placing it in the center. Sprinkle the oat crumble generously over the peaches.
  4. Fold the foil over the filling and crimp the edges tightly to seal, ensuring no gaps remain.
  5. Place the packets directly onto hot embers or on a grill grate over medium heat. Cook for 15-20 minutes, carefully flipping halfway through using tongs. Alternatively, bake packets on a baking sheet in a 375°F (190°C) oven for 25 minutes.
  6. Carefully open a packet (watch out for steam!). The peaches should be tender and bubbly, and the crumble golden and slightly crisp. If needed, reseal and cook a few minutes longer.
  7. Let the packets cool for a few minutes before serving directly from the foil or transferring to bowls. Optional: top with vanilla ice cream or whipped cream.
