Instructions

  1. Finely chop one medium onion and mince 2 cloves of garlic. Dice bell peppers or jalapeños if using. Set aside.
  2. Heat a large skillet over medium-high heat and add 1 tablespoon of oil. Heat until hot but not smoking.
  3. Add ground beef in an even layer. Let it sit undisturbed for 2-3 minutes to brown, then break it up with a spatula. Continue cooking, stirring occasionally, until no pink remains and beef is nicely browned (8-10 minutes).
  4. Optional: Drain excess fat, leaving about 1 tablespoon in the pan for flavor.

  8. Lower heat to medium-low and let the mixture simmer gently for 5 minutes. Taste and adjust seasoning as needed. Add a splash of beef broth or water if a saucier texture is desired.
  9. Stir in any fresh herbs or diced veggies as garnish. Serve hot over rice, in tacos, or alongside roasted vegetables.
