This Easy Crockpot White Chicken Chili is creamy, comforting, and packed with flavor. It’s a kid-approved, budget-friendly meal that comes together with minimal prep and is perfect for busy weeknights.

  • 1.5 lbs boneless, skinless chicken breasts (or thighs)
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 can (15 oz) great northern beans, drained and rinsed
  • 1 can (4 oz) diced green chiles (mild)
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 4 oz cream cheese, softened and cut into cubes
  • 1/2 cup heavy cream (or half-and-half)
  • 1 tbsp cornstarch mixed with 2 tbsp cold water (optional, for thickening)
  • Shredded Monterey Jack cheese (for topping)
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)
  • Tortilla chips (for serving)
  • Sour cream (for topping)
  • Lime wedges (for serving)

Instructions

  1. Prep the ingredients: dice the onion, mince the garlic, drain and rinse the beans, and cut the cream cheese into small cubes.
  2. Layer everything in the slow cooker: place chicken breasts at the bottom, then add onion, garlic, beans, and diced green chiles on top.
  3. Add the spices and broth: sprinkle cumin, oregano, smoked paprika, salt, and pepper over the top. Pour chicken broth around the edges and gently stir to combine.
  4. Cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender and shreds easily.
  5. About 30 minutes before serving, remove chicken from the crockpot, shred with two forks, and return to the pot.
  6. Add the cubed cream cheese and heavy cream, stirring gently until the cream cheese is fully melted and incorporated (about 5 minutes).
  7. If a thicker chili is desired, mix cornstarch with cold water to create a slurry, stir into the pot, and cook for another 10 minutes.
  8. Taste and adjust seasoning with salt, pepper, or additional heat as desired.
  9. Serve hot in bowls with desired toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips, and lime wedges.

Notes

For best results, use full-fat cream cheese and add it in the last 30 minutes to prevent curdling. Shred chicken while hot. This chili tastes even better the next day. To make dairy-free, omit cream cheese and heavy cream, and stir in 1/2 cup full-fat coconut milk at the end.
