  • 1/3 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, thinly sliced (for garnish)
  • Cooked rice or quinoa (for serving)
  • Steamed broccoli or your favorite veggies (for serving)

Instructions

  1. In a small mixing bowl, whisk together the honey, low-sodium soy sauce, minced garlic, tomato paste, rice vinegar, sesame oil, ground ginger, and red pepper flakes (if using) until smooth.
  2. Place the chicken thighs in the bottom of a 6-quart slow cooker, arranging them in a single layer as much as possible.
  3. Pour the prepared sauce evenly over the chicken thighs. Use tongs to gently turn the chicken to coat all pieces.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is fork-tender.
  5. Optional: To thicken the sauce, transfer the cooked chicken to a plate and tent with foil. In a small bowl, whisk together cornstarch and cold water until smooth. Pour the slurry into the sauce in the slow cooker, stir, and cook on HIGH for 15-20 minutes until thickened.
  6. Return the chicken to the slow cooker and toss gently in the thickened sauce. Garnish with sesame seeds and sliced green onions. Serve over rice or quinoa with vegetables.

Notes

For best results, use low-sodium soy sauce to prevent the dish from becoming too salty. Chicken thighs are preferred for their tenderness; if using chicken breasts, reduce cooking time to 2-3 hours on LOW or 1-2 hours on HIGH. The sauce will thicken as it cools. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
