This creamy, comforting crockpot chicken and rice casserole is the ultimate one-pot meal. With minimal prep and simple ingredients, it delivers tender chicken and perfectly cooked rice in a savory sauce, making it perfect for busy weeknights.

  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 cup uncooked long-grain white rice
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 2 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • Β½ teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients: Dice the onion and mince the garlic. Measure out the rice, broth, and spices.
  2. Spray the inside of your crockpot with non-stick cooking spray. Add the uncooked rice and spread it evenly over the bottom.
  3. Scatter the diced onion, minced garlic, and frozen vegetables over the rice. Do not stir.
  4. Pat the chicken dry with paper towels. Season both sides with salt, pepper, paprika, and dried thyme. Place the chicken pieces on top of the vegetables in a single layer.
  5. In a medium bowl, whisk together the cream of mushroom soup and chicken broth until smooth. Pour this mixture evenly over the chicken and rice. Do not stir.
  6. Put the lid on your crockpot and set it to LOW for 4 to 5 hours. Do not cook on HIGH.
  7. After 4 hours, check the rice. It should be tender and have absorbed most of the liquid. The chicken should be cooked through and easy to shred with a fork. If the rice is still crunchy, cook for another 30 minutes and check again.
  8. Remove the chicken pieces to a cutting board. Use two forks to shred the meat into bite-sized pieces. Return the shredded chicken to the crockpot and stir everything together gently.
  9. Turn off the slow cooker and let the casserole sit, covered, for 10 minutes.
  10. Spoon the casserole into bowls and garnish with fresh parsley if desired.

Notes

Do not lift the lid during cooking. Use long-grain white rice; avoid instant or brown rice. For a thicker casserole, reduce broth by ΒΌ cup. Browning the chicken before adding adds extra flavor. Let the casserole rest for 10 minutes after cooking to allow rice to absorb remaining liquid.
