This creamy, spicy buffalo chicken dip is the ultimate game day appetizer. Made with cream cheese, ranch seasoning, and shredded chicken, it’s thick, scoopable, and always the first thing to disappear at any party.

Ingredients

Scale
  • 16 oz cream cheese, softened to room temperature
  • 1 cup cooked chicken, shredded or finely chopped
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup crumbled blue cheese (optional)
  • 2 green onions, sliced thin (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 cup sour cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle of the oven. Soften cream cheese for 30-45 minutes on the counter.
  2. Shred your chicken if using rotisserie or cooked chicken breast. You’ll need about 1 cup.
  3. In a large mixing bowl, combine the softened cream cheese and ranch seasoning mix. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes.
  4. Add the buffalo wing sauce and beat on low speed until fully incorporated.
  5. Fold in the shredded chicken, 1/2 cup of the cheddar cheese, and all of the mozzarella until evenly distributed.
  6. Transfer the mixture to a 9×13-inch baking dish and spread into an even layer.
  7. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
  8. Bake for 20 to 25 minutes, or until bubbly around the edges and golden brown on top. For a deeper crust, broil for the last 2 minutes.
  9. Let the dip rest for 5 minutes before serving.
  10. Garnish with sliced green onions or crumbled blue cheese if desired. Serve immediately with chips, veggies, or bread.

Notes

For a thicker dip, use ranch seasoning mix instead of bottled ranch dressing. Drain chicken well to prevent watery dip. Can be assembled ahead and refrigerated overnight; add 5 minutes to bake time if starting cold. To keep warm during a party, transfer baked dip to a small slow cooker set to warm.
