  • 6 medium apples, peeled, cored, and sliced (mix of Granny Smith and Honeycrisp)
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1/2 cup unsalted butter
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice apples into 1/4-inch thick slices. Toss with granulated sugar, lemon juice, cinnamon, nutmeg, and flour until coated. Set aside.
  3. In a medium skillet over medium heat, melt butter. Cook, stirring occasionally, until butter turns golden amber and smells nutty, about 4-5 minutes. Remove from heat and pour into a heatproof bowl.
  4. In a medium bowl, combine oats, flour, brown sugar, salt, cinnamon, and nuts. Pour warm brown butter over dry ingredients and stir until moistened and clumpy.
  5. Pour apple mixture into a greased 8×8-inch baking dish. Sprinkle oat crumble evenly over the top.
  6. Place dish on a baking sheet and bake for 35-40 minutes, until filling is bubbly and topping is golden brown. Tent with foil if browning too quickly.
  7. Let cool on a wire rack for 10-15 minutes before serving.

For best results, use a mix of tart and sweet apples. Don’t rush the brown butter—watch it closely to avoid burning. Let the crisp rest for 10-15 minutes before serving to allow the filling to set.
