  • 2 tablespoons olive oil
  • 1/2 cup grated parmesan cheese, packed

  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Place the rack in the middle position.
  2. Wash and dry the delicata squash thoroughly.
  3. Trim the ends off each squash, cutting about 1/4 inch off the stem and blossom ends.
  4. Slice the squash into 1/2-inch thick rings.
  5. Scoop out the seeds from each ring using a small spoon or melon baller.
  6. Place the rings in a large bowl. Drizzle with 2 tablespoons olive oil and toss to coat. Add garlic powder, salt, and pepper, and toss again.
  7. Line a baking sheet with parchment paper. Arrange the squash rings in a single layer without overcrowding.
  8. Sprinkle the grated parmesan generously over each ring, pressing lightly so it sticks.
  9. Bake for 12 minutes.
  10. Carefully flip each ring using a thin spatula. Sprinkle the remaining parmesan on the other side and press gently.
  11. Bake for another 10 to 12 minutes, until both sides are golden brown and edges are crispy.
  12. Remove from the oven and let rest for 2 minutes. Transfer to a serving platter, garnish with fresh parsley if desired, and serve immediately.
