These tender, fragrant mini muffins are perfect for busy school mornings. Made with grated apples and warm cinnamon, they come together in one bowl and are ready in under 20 minutes.

  • ⅓ cup (65g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon baking powder

  • ¼ teaspoon salt
  • 1 large egg, at room temperature
  • ¼ cup (57g) unsalted butter, melted and slightly cooled
  • ¼ cup (60g) plain Greek yogurt
  • ¼ cup (60ml) milk (any kind)
  • 1 teaspoon vanilla extract
  • 1 medium apple (about 150g), peeled and grated (Honeycrisp, Fuji, or Gala recommended)
  • For the topping (optional): 2 tablespoons turbinado sugar mixed with ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 24-cup mini muffin pan generously with non-stick cooking spray or use paper liners.
  2. Peel and grate the apple on the large holes of a box grater. Squeeze out excess liquid with your hands and set aside.
  3. In a large bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, baking powder, baking soda, and salt.
  4. In a separate medium bowl, whisk together the egg, melted butter, Greek yogurt, milk, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients. Add the grated apple. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  6. Divide the batter evenly among the 24 mini muffin cups, filling each about three-quarters full.
  7. If using the topping, mix the turbinado sugar and remaining ½ teaspoon cinnamon in a small bowl. Sprinkle a generous pinch over each muffin.
  8. Bake for 10-12 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 2-3 minutes, then transfer to a wire cooling rack to cool completely.

Notes

Grate the apple instead of chopping to ensure even moisture distribution. Do not overmix the batter to avoid tough muffins. For best results, use room temperature ingredients. Muffins can be stored in an airtight container at room temperature for up to 3 days, refrigerated for up to a week, or frozen for up to 3 months.
