Easy Apple Cider Mimosa: The Perfect Fall Brunch Cocktail

A bright, crisp, slightly sweet cocktail that tastes like autumn in a glass. This easy mimosa combines chilled apple cider and dry sparkling wine with a cinnamon sugar rim for a festive fall brunch drink.

  • 4 ounces apple cider, chilled
  • 4 ounces sparkling wine or champagne, chilled (dry or brut style)
  • Ice (optional)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Honey or maple syrup (for dipping the rim)
  • Thin apple slices (for garnish, optional)
  • Cinnamon sticks (for garnish, optional)

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon. Stir together with a fork until evenly distributed.
  2. Prepare the rim of your glasses: Pour a small amount of honey or maple syrup into another shallow dish (about 1/4 inch deep). Dip the rim of each glass into the honey, turning gently to coat the entire edge. Let excess drip off.
  3. Coat the rim with cinnamon sugar: Immediately after dipping in honey, press the rim of the glass into the cinnamon sugar mixture. Turn slowly to ensure even coverage. Lift straight up and tap gently to remove loose sugar. Repeat with remaining glasses.
  4. Fill the glasses with ice (optional): If desired, add a few ice cubes to each glass.
  5. Pour the apple cider: Measure 4 ounces (about 1/2 cup) of chilled apple cider into each glass. Pour slowly to avoid disturbing the rim.
  6. Top with sparkling wine: Add 4 ounces (about 1/2 cup) of chilled sparkling wine or champagne to each glass. Pour gently down the side to preserve bubbles.
  7. Garnish and serve: Add a thin apple slice to each glass and drop in a cinnamon stick if desired. Serve immediately.

Notes

Chill all ingredients thoroughly before serving. Use a dry sparkling wine to balance the sweetness of the cider. Prep the rims no more than 10 minutes before serving to prevent clumping. For a non-alcoholic version, substitute sparkling apple cider or ginger ale.
