A quick and fuss-free summer dessert featuring ripe peaches and a nutty brown butter biscuit topping. Perfect for last-minute cravings and simple gatherings.

Ingredients

Scale
  • 45 medium fresh peaches (about 4 cups sliced)
  • 1/2 cup brown sugar
  • 2 cups all-purpose biscuit mix (e.g., Bisquick)
  • 1/2 cup (1 stick) unsalted butter, browned
  • 1 teaspoon ground cinnamon
  • Optional: pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and slice peaches into 1/2-inch thick wedges. Toss with brown sugar and ground cinnamon in a bowl. Let sit for about 10 minutes.
  3. Melt unsalted butter in a medium saucepan over medium heat. Stir constantly until butter foams, turns golden brown, and smells nutty (about 5 minutes). Remove from heat immediately.
  4. In a separate bowl, combine biscuit mix with the browned butter. Stir gently until mixture resembles thick, crumbly dough.
  5. Pour peach mixture into an 8×8-inch baking dish, spreading evenly. Dollop biscuit batter over peaches in spoonfuls, leaving gaps for juices to bubble through.
  6. Bake for 25-30 minutes until topping is golden and slightly crisp and peach juices are bubbling. Tent with foil if topping browns too fast.
  7. Let cobbler rest for 10 minutes before serving to thicken juices.

Notes

Use a light-colored pan to brown butter to monitor color changes. If peaches are less juicy, add a splash of lemon juice or water to the peach mixture. Avoid overmixing the batter to keep a crumbly texture. Tent with foil if topping browns too quickly. Can substitute biscuit mix with gluten-free baking mix or almond flour for gluten-free version. Vegan option: use coconut oil or vegan butter and dairy-free biscuit mix.
