This easy 3-ingredient pumpkin spice syrup for coffee is proof that the simplest approach is usually the best one. It turns an ordinary cup into something you actually look forward to.

Ingredients

Scale
  • 1 cup water
  • 1 cup granulated sugar
  • 1/4 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Combine water and sugar in your saucepan. Place the pan over medium heat and whisk gently until the sugar dissolves completely, about 2-3 minutes.
  2. Add the pumpkin puree and pumpkin pie spice. Whisk vigorously to break up any clumps of pumpkin.
  3. Bring the mixture to a gentle simmer. Let it simmer for 5-7 minutes, whisking occasionally.
  4. Remove from heat and let it cool for 5 minutes.
  5. Strain the syrup through your fine-mesh strainer into your clean glass jar. Press gently on the solids with the back of a spoon to extract every last drop.
  6. Let the syrup cool completely at room temperature before sealing the jar, about 30-45 minutes.
  7. Store in the refrigerator for up to 2 weeks. Give it a good shake before each use.

Notes

Don’t boil the syrup vigorously; a gentle simmer is all you need. Let the syrup cool completely before tasting, as warm syrup will taste thinner and less sweet. Label your jar to avoid confusion.
