  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • Β½ teaspoon sea salt
  • 1 tablespoon olive oil or avocado oil
  • Β½ teaspoon vanilla extract (optional)
  • Pinch of ground nutmeg (optional)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Drain and rinse the chickpeas thoroughly. Pat them dry with a clean kitchen towel or paper towels, drying twice if needed.
  3. In a mixing bowl, combine olive oil, maple syrup, ground cinnamon, sea salt, and vanilla extract if using. Stir until smooth and glossy.
  4. Add the dried chickpeas to the bowl and toss gently until evenly coated with the maple cinnamon mixture.
  5. Spread the chickpeas in a single even layer on the prepared baking sheet, ensuring they are not piled up.
  6. Roast in the oven for 25 to 30 minutes, stirring every 10 minutes, until golden brown and fragrant. Watch closely near the end to avoid burning.
  7. Remove from the oven and let the chickpeas cool completely on the baking sheet to crisp up.
  8. Once cooled, give them a final toss and transfer to an airtight container for storage or immediate munching.
