Crowd-Pleasing Crispy Smashed Potatoes with Garlic Herb Butter

These crispy smashed potatoes are boiled then roasted to perfection, basted with a garlic herb butter that infuses every crack. They’re the ultimate crowd-pleasing side dish for any gathering.

  • 2 pounds baby gold or red potatoes
  • 2 tablespoons kosher salt
  • 1 tablespoon baking soda
  • 3 tablespoons olive oil
  • Flaky sea salt (for finishing)
  • Freshly ground black pepper (to taste)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped, plus more for garnish)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme leaves
  • 1/4 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
  2. Wash the potatoes thoroughly and pat dry.
  3. Bring a large pot of water to a rolling boil. Add the kosher salt and baking soda.
  4. Add the potatoes to the boiling water and cook for 15-20 minutes until fork-tender.
  5. Drain the potatoes in a colander and let them steam dry for 2-3 minutes.
  6. Transfer the potatoes to the prepared baking sheet, spacing them out evenly.
  7. Smash each potato gently to about 1/2-inch thickness using a potato masher or flat-bottomed glass.
  8. Drizzle the smashed potatoes with olive oil, coating all surfaces. Season with salt and pepper.
  9. Roast the potatoes for 20 minutes.
  10. While the potatoes roast, make the garlic herb butter: Melt butter in a small saucepan over medium-low heat. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat and stir in parsley, rosemary, thyme, red pepper flakes (if using), and lemon zest.
  11. After 20 minutes, remove the potatoes from the oven and brush generously with the garlic herb butter, reserving about 2 tablespoons for later.
  12. Return the potatoes to the oven for another 15-20 minutes until deep golden brown and crispy.
  13. Remove from the oven, drizzle with reserved garlic herb butter, sprinkle with flaky sea salt and extra fresh parsley. Serve immediately.

Notes

The baking soda trick is non-negotiable for extra crispiness. Don’t overcrowd the pan; use two baking sheets if needed. Let the potatoes steam dry after boiling for better browning. Use room temperature butter for basting. These potatoes are best served immediately within 10 minutes of coming out of the oven.
