Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Peel and cut the kohlrabi bulbs into sticks roughly ¼ to ½ inch thick, keeping them uniform for even cooking.
  3. Dry the kohlrabi sticks thoroughly with paper towels to remove excess moisture.
  4. In a medium bowl, toss the kohlrabi sticks with olive oil until evenly coated.
  5. Sprinkle cornstarch, garlic powder, paprika, salt, and black pepper over the oiled kohlrabi and toss well to coat evenly.
  6. Arrange the fries in a single layer on the prepared baking sheet, spacing them out to avoid overcrowding.
  7. Roast for 25-30 minutes, flipping the fries halfway through (around 15 minutes) to brown on all sides. Check at 20 minutes if your oven runs hot.
  8. While the fries roast, prepare the dip by whisking together mayonnaise, sriracha, lime juice, honey, minced garlic, and a pinch of salt in a small bowl. Adjust seasoning to taste.
  9. Once fries are crispy and cooked through, remove from the oven and let them cool for a minute or two to crisp up further.
  10. Serve the fries warm with the spicy sriracha lime dip on the side.
