  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon water
  • 3 tablespoons olive oil (or avocado oil)
  • 2 tablespoons unsalted butter

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides with salt, pepper, garlic powder, and paprika. Let sit at room temperature for 10 minutes.
  2. Set up three shallow bowls: first with flour, second with whisked eggs, Dijon mustard, and water, third with panko and Parmesan mixed together.
  3. Working one at a time, dredge each chop in flour (shake off excess), dip in egg mixture (let excess drip), then press into panko-Parmesan mixture until fully coated. Place on a plate.
  4. Heat a large skillet over medium heat. Add olive oil and butter; let butter melt and foam until shimmering but not smoking.
  5. Place two chops in the skillet (do not crowd). Cook 4-5 minutes per side without moving, until golden and internal temperature reaches 145Β°F. Repeat with remaining chops, adding more oil/butter if needed.
  6. Transfer cooked chops to a cutting board and rest for 5 minutes before serving.

Notes

For best results, use thick pork chops (at least 1 inch). Pat chops dry before coating to ensure crispiness. If crust browns too quickly, transfer skillet to a 375Β°F oven to finish cooking. Let chops rest 5 minutes before serving. For gluten-free, use gluten-free panko and almond flour. For air fryer, cook at 400Β°F for 10-12 minutes, flipping halfway.
