Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken skin dry with paper towels. Rub each piece with 2 tablespoons olive oil, then season generously with kosher salt and black pepper on all sides.
  3. Place a wire rack over a baking sheet. Lay the chicken quarters skin-side up on the rack, making sure they’re not touching.
