Ingredients

Scale
  • 2 pounds chicken wings, split into flats and drumettes
  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup hot sauce (e.g., Frank’s RedHot)
  • 1 teaspoon honey (optional)
  • 1 teaspoon apple cider vinegar
  • Celery sticks (for serving, optional)
  • Blue cheese dip (for serving, optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top.
  2. Pat dry the chicken wings thoroughly with paper towels to remove moisture.
  3. In a large bowl, combine baking powder, salt, garlic powder, onion powder, and black pepper.
  4. Add the wings to the bowl and toss until evenly coated with the dry rub.
  5. Arrange the wings in a single layer on the wire rack, ensuring they are not touching.
  6. Bake the wings for 35-40 minutes, flipping halfway through, until the skin is golden brown and crispy.
  7. While the wings bake, melt the butter in a small saucepan over low heat. Stir in hot sauce, honey (if using), and apple cider vinegar. Adjust seasoning to taste.
  8. Transfer the baked wings to a large bowl and gently toss with the buffalo sauce until well coated.
  9. Serve immediately with celery sticks and blue cheese dip if desired.

Notes

Use aluminum-free baking powder for best results. Pat wings dry thoroughly to ensure crispiness. Flip wings halfway through baking for even crisping. For extra crispiness, broil wings for 2-3 minutes at the end, watching closely to avoid burning. Toss wings gently in sauce to preserve crispy skin. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven to maintain crispiness.
