A quick and easy recipe for crispy, sweet, and smoky chicken drumsticks glazed with honey and BBQ sauce, perfect for dinner or weekend cookouts.

  • 8 chicken drumsticks (about 2 lbs / 900 g), skin-on
  • 1/4 cup honey (85 g), preferably raw or good-quality local brand
  • 1/2 cup BBQ sauce (120 ml), smoky and slightly tangy
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon brown sugar (12 g)
  • 1 teaspoon smoked paprika (2 g)
  • 1 teaspoon garlic powder (2 g)
  • 1/2 teaspoon onion powder (1 g)
  • 1 teaspoon salt (6 g), kosher or sea salt
  • 1/2 teaspoon black pepper (1 g), freshly ground
  • Optional: pinch of cayenne pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Pat the chicken drumsticks dry with paper towels to remove excess moisture.
  3. In a large mixing bowl, combine olive oil, brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper if using. Whisk until sugar dissolves and spices are evenly distributed.
  4. Add the drumsticks to the bowl and toss thoroughly to coat each piece evenly with the dry rub.
  5. Arrange the drumsticks on the wire rack, spacing them apart to avoid steaming.
  6. Bake in the preheated oven for 25 minutes, flipping the drumsticks halfway through (around 12 minutes) for even cooking and browning.
  7. While the chicken bakes, mix the honey and BBQ sauce in a small bowl to create the glaze.
  8. After 25 minutes, remove the drumsticks and brush the honey BBQ glaze generously on all sides.
  9. Return to the oven and broil on high for 3-5 minutes, watching carefully to caramelize the glaze without burning.
  10. Use a meat thermometer to check for an internal temperature of 165°F (74°C). If not reached, bake a few more minutes, monitoring closely.
  11. Let the chicken rest for 5 minutes before serving to allow juices to redistribute and glaze to set.

Notes

Pat chicken dry before seasoning for crispy skin. Flip drumsticks halfway through baking for even browning. Apply honey BBQ glaze only during the last 3-5 minutes under the broiler to avoid burning. Let chicken rest before serving. For extra crispiness, pat dry again after first bake before glazing.
