  • 4 bone-in, skin-on chicken thighs
  • 1.5 pounds Yukon Gold or red potatoes (about 700g), quartered
  • 4 tablespoons (60g) unsalted butter, softened
  • 45 large garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme or rosemary, chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: fresh lemon juice, red pepper flakes

Instructions

  1. Preheat your oven to 425Β°F (220Β°C).
  2. Wash and quarter the potatoes into uniform pieces (about 1 to 1.5 inches). Toss them in a bowl with 1 tablespoon olive oil, salt, pepper, and half the chopped thyme. Set aside.
  3. In a small bowl, mix the softened butter, minced garlic, remaining thyme, and a pinch of salt and pepper. Add red pepper flakes if desired.
  4. Pat the chicken thighs dry thoroughly with paper towels and season generously with salt and pepper on both sides.
  5. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Once shimmering, add the chicken thighs skin side down. Press gently to keep skin flat. Sear without moving for 6-8 minutes until the skin is deep golden brown and crispy.
  6. Flip the chicken and cook for 2 more minutes. Add the garlic butter mixture on top of the chicken, letting it melt and sizzle.
  7. Add the potatoes around the chicken in the skillet, tossing gently to coat in the pan juices and butter. Spread evenly.
  8. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165Β°F (74Β°C) and the potatoes are tender and golden.
  9. Remove from oven and let the chicken rest for 5 minutes before serving.
  10. Optional: Squeeze fresh lemon juice over the chicken and potatoes before serving.

Pat chicken skin dry thoroughly for best crispiness. Use a heavy pan like cast iron for better heat retention. Do not move chicken while searing to allow skin to crisp. Add garlic butter after searing to avoid burning garlic. Avoid overcrowding potatoes in the pan to ensure crispiness. Use a meat thermometer to check chicken doneness at 165Β°F (74Β°C). For dairy-free, substitute butter with vegan margarine or extra olive oil.
