  • 12 medium fresh jalapeños, halved and deseeded
  • 8 ounces (225g) cream cheese, softened
  • 1 cup (about 100g) shredded cheddar cheese
  • 12 slices thin to medium thickness bacon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top if using.
  2. Slice each jalapeño in half lengthwise and scoop out seeds and membranes to reduce heat.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  4. Fill each jalapeño half evenly with the cream cheese mixture, keeping the filling level with the edges.
  5. Wrap each filled jalapeño half with one slice of bacon, spiraling from bottom to top. Secure with a toothpick if needed.
  6. Place the wrapped poppers on the wire rack or directly on the foil-lined baking sheet.
  7. Bake for 20-25 minutes, turning once halfway through if on foil, until bacon is crispy and cheese is bubbly.
  8. Let poppers rest for 5 minutes before serving.

Notes

Wear gloves when handling jalapeños to avoid skin irritation. Check poppers at 18 minutes to prevent burning. For extra smoky flavor, broil for 2 minutes at the end. Reheat leftovers in oven at 375°F for 8-10 minutes to keep bacon crispy. Avoid microwaving to prevent sogginess.
