Instructions

  1. In a large bowl, whisk together gluten-free all-purpose flour, almond flour, baking powder, xanthan gum, smoked paprika, garlic powder, salt, and pepper until evenly mixed (about 3 minutes).
  2. In a separate bowl, beat the egg with almond milk and olive oil until smooth (about 1 minute).
  3. Slowly pour the wet mix into the dry ingredients, stirring gently until just combined. The batter should be thick but scoopable (2-3 minutes).
  4. On a shallow plate, mix gluten-free panko breadcrumbs, grated Parmesan, and dried Italian herbs. Set aside.
  5. Shape the batter into small nuggets, patties, or sticks. Dip each piece into the breadcrumb mixture, pressing gently to coat well.
