Ingredients

Scale
  • 1 cup unsweetened oat milk (or any milk you prefer)
  • 2 chai tea bags (recommend Tazo or Stash)
  • 1/2 cup canned pumpkin puree (100% pure pumpkin)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • Tiny pinch of black pepper
  • Pinch of salt
  • 2 tablespoons Greek yogurt (for topping, optional)
  • 1 tablespoon chopped pecans or walnuts (for topping, optional)
  • 1 teaspoon pumpkin seeds (for topping, optional)
  • Drizzle of maple syrup (for topping, optional)
  • A dusting of cinnamon (for topping, optional)

Instructions

  1. Steep the chai milk: Pour the oat milk into a small saucepan and warm over medium-low heat until warm but not boiling. Remove from heat, add chai tea bags, and steep for 5 minutes. Gently squeeze the bags against the side of the pan with a spoon before removing.
  2. Whisk the wet ingredients: In a medium bowl, whisk together the warm chai milk, pumpkin puree, maple syrup, and vanilla extract until fully combined.
  3. Mix the dry ingredients: In a separate small bowl, stir together the rolled oats, chia seeds, pumpkin pie spice, cinnamon, ginger, black pepper, and salt.
  4. Combine everything: Pour the dry ingredients into the wet ingredients and stir until well combined. The mixture will look loose.
  5. Divide into jars: Pour the mixture evenly into two mason jars or airtight containers, leaving about an inch of space at the top.
  6. Refrigerate overnight: Put the lids on and refrigerate for at least 6 hours, or up to 4 days.
  7. Add toppings and serve: In the morning, stir the oats. If too thick, add a splash of milk. Top with Greek yogurt, chopped pecans, pumpkin seeds, a drizzle of maple syrup, and a dusting of cinnamon.

Notes

For best flavor, warm the milk before steeping the chai tea bags. Do not skip the chia seedsβ€”they are crucial for creamy texture. The flavors improve on day two. To make vegan, use maple syrup instead of honey and skip the Greek yogurt or use a dairy-free alternative.
