A quick and easy 5-minute overnight oats recipe with creamy peanut butter, ripe banana, and rolled oats. Perfect for busy mornings, this grab-and-go breakfast tastes like a milkshake but keeps you full until lunch.

  • 1/2 cup rolled oats (old-fashioned)
  • 1 ripe banana (with brown spots)
  • 2 tablespoons creamy peanut butter
  • 1/2 cup milk of choice (dairy, almond, oat, or coconut)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • 1 pinch salt

Instructions

  1. In a mason jar or container, mash the ripe banana with a fork until mostly smooth with a few small lumps.
  2. Add 2 tablespoons of creamy peanut butter on top of the mashed banana. Do not stir yet.
  3. Pour in 1/2 cup of milk.
  4. Add 1 tablespoon of maple syrup, 1/2 teaspoon of vanilla extract, and a pinch of salt. If using chia seeds, add 1 tablespoon now.
  5. Stir everything together thoroughly until the peanut butter is fully incorporated and the mixture looks uniform and slightly thick, like thin pancake batter.
  6. Add 1/2 cup of rolled oats and stir again until every oat is coated in the liquid mixture.
  7. Cover the jar or container with a lid or plastic wrap and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  8. In the morning, stir the oats. If too thick, add a splash of milk to reach desired consistency. Top with sliced banana, a drizzle of peanut butter, or granola if desired.

Notes

Use a very ripe banana for natural sweetness. Stir the mixture again 30 minutes after making to ensure even absorption. For meal prep, store in the fridge for up to 5 days; add a splash of milk before serving if too thick. To warm, microwave for 30-45 seconds. For a chocolate version, add 1 tablespoon cocoa powder. For high protein, add a scoop of protein powder and increase milk by 2 tablespoons.
