A quick and easy one-pot recipe featuring tender chicken, sun-dried tomatoes, and creamy sauce cooked with pasta for a flavorful and comforting dinner.

  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained slightly)
  • 8 ounces penne or rigatoni pasta
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cups low sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt, pepper, and half the Italian seasoning. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes, stirring occasionally, until golden and mostly cooked through. Remove from the pan and set aside.
  2. Lower the heat to medium, add the remaining olive oil, then add the minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn it.
  3. Stir in the chopped sun-dried tomatoes, then pour in the chicken broth and heavy cream. Sprinkle the remaining Italian seasoning and a pinch of salt and pepper. Stir to combine.
  4. Add the dry pasta directly into the creamy mixture. Push it gently into the liquid to submerge as much as possible. Bring to a simmer, then cover and cook for 12-15 minutes, stirring occasionally to prevent sticking. Add more broth or water if the mixture looks too dry before the pasta is done.
  5. Return the cooked chicken to the pan along with fresh spinach. Stir until the spinach wilts and the chicken is heated through, about 2-3 minutes.
  6. Remove from heat and mix in freshly grated Parmesan cheese. The sauce will thicken and become creamy. Taste and adjust salt and pepper as needed.
  7. Serve immediately, optionally garnished with extra cheese or fresh basil.

Notes

Do not overcrowd the pan when browning chicken to avoid steaming. Stir pasta frequently during cooking to prevent sticking. Use fresh Parmesan cheese for best flavor and texture. Add spinach at the end to keep it fresh and vibrant. Adjust liquid as needed during pasta cooking to avoid dryness or runny sauce.
