  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cans (14.5 ounces each) crushed tomatoes
  • 1 cup vegetable broth or chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese
  • 1/3 cup fresh basil leaves, chopped

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add the butter and let it melt. Add the diced onion and cook for about 4 minutes until soft and translucent. Add the minced garlic and red pepper flakes (if using) and cook for 30 seconds until fragrant.
  2. Pour in the crushed tomatoes and broth. Add the oregano, salt, and pepper. Stir well, scraping up any browned bits from the bottom. Bring to a gentle boil, then reduce heat to low and simmer for 8 to 10 minutes.
  3. Turn off the heat. Using an immersion blender, blend the soup until completely smooth. (Alternatively, let cool for 5 minutes, then carefully blend in batches in a regular blender, filling only halfway and covering the lid with a towel.)
  4. Return the pot to low heat. Stir in the heavy cream and Parmesan cheese until melted and incorporated. Add the chopped fresh basil and stir gently. Taste and adjust seasoning if needed. Let warm through for about 2 minutes, but do not let it boil.
  5. Ladle the soup into bowls. Garnish with extra fresh basil, a drizzle of cream, or extra Parmesan. Serve hot with crusty bread or a grilled cheese sandwich.

Notes

For best results, use whole peeled tomatoes crushed by hand. Bring cream to room temperature before adding to prevent curdling. The soup tastes even better the next day. To make it vegan, use olive oil instead of butter, full-fat coconut milk instead of heavy cream, and omit Parmesan or use a dairy-free alternative.
