Instructions

  1. Cook the bacon: Place the chopped bacon in your cold Dutch oven. Turn the heat to medium and cook, stirring occasionally, until the bacon is crispy and the fat has rendered—about 6-8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Leave about 2 tablespoons of the bacon fat in the pot.
  2. Sauté the aromatics: Add the diced onion to the pot with the bacon fat. Cook over medium heat, stirring often, until the onion is soft and translucent—about 4-5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the potatoes and broth: Pour in the chicken broth and add the diced potatoes. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for 12-15 minutes, or until the potatoes are fork-tender.
  4. Mash the potatoes: Remove the pot from the heat. Using a potato masher, gently mash the potatoes right in the pot. You want about half the potatoes mashed and half still in chunks.
