  • 1/2 cup (120g) plain Greek yogurt
  • 1/4 cup (60g) cottage cheese
  • 3 tablespoons (48g) natural peanut butter
  • 1 tablespoon (12g) chia seeds
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced bananas, dark chocolate chips, chopped peanuts, extra peanut butter, fresh berries

Instructions

  1. In a medium bowl or large liquid measuring cup, whisk together milk, Greek yogurt, cottage cheese, peanut butter, maple syrup, vanilla extract, and salt until smooth and creamy.
  2. Stir in rolled oats and chia seeds until evenly distributed.
  3. Divide the mixture evenly into 2-3 mason jars or airtight containers, leaving about an inch of headspace.
  4. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk to reach desired consistency.
  6. Add desired toppings and serve cold, or let sit at room temperature for 10 minutes before eating.
