A rich, creamy, and slightly spicy queso dip made with sausage, cream cheese, and a blend of cheddar and pepper jack, slow-cooked to perfection. Perfect for game day or any gathering.

  • 1 pound ground pork sausage (Jimmy Dean’s regular or mild recommended)
  • 1 block (8 oz) cream cheese, softened and cut into cubes
  • 1 can (10 oz) Rotel tomatoes with green chilies, undrained
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 8 ounces pepper jack cheese, freshly shredded
  • 1 can (12 oz) evaporated milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Brown the sausage: Heat a large skillet over medium-high heat. Add the ground sausage and cook, breaking it up with a spoon, until browned and cooked through (6-8 minutes). Drain excess grease if needed.
  2. Prepare the slow cooker: Spray the inside of a 3-quart or larger slow cooker with nonstick cooking spray.
  3. Add the cream cheese: Place the cubed cream cheese in the bottom of the slow cooker.
  4. Layer in the shredded cheeses: Add the shredded cheddar and pepper jack on top of the cream cheese.
  5. Add the Rotel and seasonings: Pour in the undrained Rotel, then sprinkle garlic powder, onion powder, and smoked paprika over everything.
  6. Pour in the evaporated milk.
  7. Add the cooked sausage: Spoon the browned sausage over the top.
  8. Cook on low: Cover and cook on LOW for 1½ to 2 hours, or on HIGH for 45 minutes to 1 hour, until everything is melted and smooth.
  9. Stir and adjust: Stir until uniform. Taste and add salt and pepper as needed.
  10. Serve warm: Switch the slow cooker to ‘warm’ setting and serve directly from the pot. Garnish with fresh cilantro if desired.

Notes

For best results, shred cheese from a block rather than using pre-shredded cheese. If dip seems too thick, stir in a splash of milk. If too thin, cook uncovered for 15-20 minutes. Leftovers can be refrigerated for up to 4 days and reheated gently.
