This creamy chicken salad combines tender shredded chicken, sweet red grapes, and toasted pecans in a tangy dressing made with mayonnaise and Greek yogurt. It’s a quick, versatile dish perfect for lunches, dinners, or potlucks.

Ingredients

Scale
  • 3 cups cooked chicken, shredded or diced
  • 1 cup red seedless grapes, halved
  • ½ cup pecans, chopped and toasted
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • 2 stalks celery, finely diced
  • 3 stalks green onion, thinly sliced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 1 tablespoon fresh dill, chopped (optional)

Instructions

  1. Toast the pecans: Place chopped pecans in a dry skillet over medium heat. Stir frequently for 3-4 minutes until fragrant and lightly golden. Transfer to a plate to cool.
  2. Prepare the chicken: If using rotisserie chicken, remove skin and bones, then shred meat with hands or two forks. If using leftover grilled chicken, dice into ½-inch cubes.
  3. Chop the vegetables: Halve the red grapes lengthwise. Dice celery into small, even pieces. Thinly slice green onions.
  4. Make the dressing: In a large mixing bowl, combine mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper. Whisk until smooth and well-blended.
  5. Combine everything: Add shredded chicken, halved grapes, diced celery, sliced green onions, cooled toasted pecans, and fresh dill (if using) to the bowl with dressing. Gently fold until all ingredients are evenly coated.
  6. Chill (optional but recommended): Cover bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  7. Serve: Scoop onto sandwich bread, croissants, lettuce wraps, or crackers. Garnish with extra pecan halves or fresh dill if desired.

Notes

Toasting the pecans is essential for best flavor. For a lighter dressing, use half mayo and half Greek yogurt. The salad can be made a day ahead; flavors improve overnight. If salad seems dry after chilling, stir in an extra tablespoon of mayonnaise or yogurt.
