  • 6 medium apples, peeled and sliced into ¼-inch thick pieces (about 2 pounds / 900g)
  • 2 tablespoons all-purpose flour (16g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup old-fashioned rolled oats (90g)
  • ½ cup all-purpose flour (60g)
  • ¼ cup almond flour (25g)
  • ½ cup packed light brown sugar (100g)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes (85g)

Instructions

  1. Make the salted caramel: Place the granulated sugar in a medium saucepan over medium heat. Let it melt without stirring, swirling the pan occasionally, until it turns a deep amber color (about 5-7 minutes). Remove from heat. Add the butter cubes and stir vigorously until melted. Slowly pour in the heavy cream while stirring constantly. Stir in the sea salt and vanilla. Set aside to cool slightly.
  2. Preheat oven to 375°F (190°C). In a large bowl, combine the sliced apples, 2 tablespoons flour, lemon juice, 1 teaspoon cinnamon, and nutmeg. Toss until coated. Pour about half of the salted caramel over the apples and toss again. Transfer to a 9×13-inch baking dish and spread evenly.
  3. Make the oat crumble: In a medium bowl, whisk together the rolled oats, ½ cup flour, almond flour, brown sugar, ½ teaspoon cinnamon, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  4. Sprinkle the oat crumble evenly over the apples. Do not press down. Bake for 40-45 minutes, until the topping is golden brown and the filling is bubbly. If the topping browns too quickly, tent with foil after 30 minutes.
  5. Let the crisp cool on a wire rack for at least 15 minutes before serving. Drizzle the remaining salted caramel over the top just before serving.

Notes

For best results, use a mix of tart and sweet apples (e.g., Granny Smith and Honeycrisp). Make sure the heavy cream is at room temperature to prevent the caramel from seizing. Let the crisp rest for at least 15 minutes before serving to allow the filling to set. The crisp can be assembled up to 24 hours in advance and refrigerated; add 5-10 minutes to the baking time.
