Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Place a rack in the middle position.
  2. Make the cobbler topping batter: In a large mixing bowl, whisk together 1 cup flour, 1 cup granulated sugar, 1 tablespoon baking powder, and 1/4 teaspoon salt. Add 1 cup milk and whisk until smooth. Pour this batter into your ungreased 9×13 baking dish. Don’t stir.
  3. Pour the melted butter over the batter: Drizzle 1/2 cup melted butter over the top of the batter without stirring. Set aside.
  4. Make the pecan filling: In a medium bowl, whisk together 1 cup packed brown sugar, 1 cup corn syrup, 1/2 cup melted butter, 3 room-temperature eggs, 1 teaspoon vanilla, and 1/4 teaspoon salt until smooth.
  5. Stir in the chopped pecans: Fold in 2 cups chopped pecans until evenly coated.
  6. Pour the filling over the batter: Slowly pour the pecan mixture over the batter in the dish. Don’t stir.
  7. Bake for 40-45 minutes until the top is golden brown and the cobbler is set around the edges but still slightly jiggly in the center.
  8. Cool for 10-15 minutes on a wire rack.
  9. Serve warm with vanilla ice cream.
