A warm and comforting overnight French toast bake bursting with juicy blueberries and a creamy cream cheese filling. Perfect for easy weekend mornings or brunch with minimal prep.

Ingredients

Scale
  • 8 cups cubed brioche or challah bread (about 12 ounces / 340 grams)
  • 1 ½ cups fresh or frozen blueberries
  • 8 ounces (225 grams) cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for cream cheese filling)
  • 6 large eggs, room temperature
  • 2 ½ cups whole milk (or 2% or almond milk for lighter version)
  • ½ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract (for custard)
  • ¼ teaspoon salt
  • ½ cup chopped pecans or walnuts (optional)
  • 2 tablespoons brown sugar
  • Butter or non-stick spray (for greasing the baking dish)

Instructions

  1. Prepare the Cream Cheese Filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and 1 teaspoon vanilla extract until smooth and creamy. Set aside.
  2. Cube the Bread: Cut brioche or challah into roughly 1-inch cubes. If fresh, let sit out for a couple of hours or lightly toast the cubes to help absorb custard better.
  3. Mix the Custard: In a large bowl, whisk together eggs, milk, granulated sugar, cinnamon, vanilla extract, and salt until fully combined and frothy.
  4. Assemble the Bake: Grease a 9×13-inch baking dish with butter or non-stick spray. Layer half the bread cubes evenly on the bottom. Dollop spoonfuls of cream cheese filling over the bread, then scatter half the blueberries. Add remaining bread cubes, cream cheese filling, and blueberries.
  5. Pour Custard & Top: Pour custard mixture slowly over the layered bread, pressing gently to ensure all bread pieces soak up the liquid. Sprinkle chopped nuts and brown sugar over the top if using.
  6. Refrigerate Overnight: Cover the dish with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  7. Bake: Preheat oven to 350°F (175°C). Remove cover and bake uncovered for 45-50 minutes until top is golden brown and custard is set (knife inserted should come out clean).
  8. Cool & Serve: Let bake cool for 10 minutes before serving. Serve warm with maple syrup or powdered sugar.

Notes

Lightly toast bread cubes if fresh to prevent sogginess. Ensure cream cheese is softened to avoid lumps. Do not over-whisk custard to prevent puffing and collapsing. Tent with foil if top browns too quickly. Whole milk or creamier milk options yield richer custard. Minimum soak time is 4 hours but overnight is best for flavor and texture.
