  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 1/2 cups all-purpose flour
  • 3/4 cup rolled oats
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Make the miso caramel sauce: In a medium saucepan over medium heat, melt 1/2 cup butter. Whisk in 1 cup brown sugar and let bubble for 2 minutes, stirring constantly. Slowly pour in 1/2 cup heavy cream while whisking. Reduce heat to low and whisk in 2 tablespoons white miso paste until dissolved. Remove from heat and stir in vanilla and salt. Let cool slightly.
  3. Prepare the apple filling: In a large bowl, toss sliced apples with 2 tablespoons flour, 1 tablespoon lemon juice, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/4 teaspoon ginger. Pour into prepared baking dish and spread evenly.
  4. Pour about 3/4 of the miso caramel sauce over the apples. Reserve the rest for serving. Gently fold apples to coat.
  5. Make the crumble topping: In a separate bowl, whisk together 1 1/2 cups flour, 3/4 cup oats, 1/2 cup brown sugar, 1/2 cup granulated sugar, and 1/2 teaspoon salt. Add cold butter cubes and cut in with a pastry cutter or fingertips until mixture resembles coarse meal with pea-sized butter pieces. Sprinkle evenly over apples.
  6. Place baking dish on a baking sheet. Bake for 35-40 minutes, until topping is golden brown and filling is bubbling. If topping browns too quickly, tent with foil after 25 minutes.
  7. Let cool on a wire rack for at least 15 minutes. Drizzle reserved miso caramel over the top just before serving.

Notes

Don’t skip the lemon juice for the applesβ€”it balances sweetness. For a gluten-free version, use a 1:1 gluten-free baking blend and certified gluten-free oats. For a vegan adaptation, use coconut oil or vegan butter in the crumble and full-fat coconut cream in the caramel. The miso flavor deepens after a day in the fridge, so consider baking a day ahead.
