Cozy Iced Pumpkin Chai Latte with Oat Milk – Easy Fall Recipe

A quick and easy iced pumpkin chai latte made with oat milk, real pumpkin puree, and chai tea. This cozy fall drink is creamy, spiced, and perfect for autumn days.

  • 1 cup (240 ml) oat milk, cold
  • 2 tablespoons (30 g) pumpkin puree
  • 2 chai tea bags
  • 12 tablespoons (1530 ml) maple syrup, to taste
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1/4 teaspoon (0.5 g) ground cinnamon, plus more for garnish
  • 1/8 teaspoon (0.25 g) ground ginger
  • 1 pinch (about 1/16 teaspoon) ground nutmeg
  • 1 cup ice cubes

Instructions

  1. Steep the chai tea bags: Pour 1/2 cup (120 ml) of water into a small saucepan and bring to a gentle boil. Remove from heat, add both chai tea bags, and let steep for 5 minutes. Remove tea bags and gently squeeze them over the pan.
  2. Heat the oat milk: Add the oat milk to the saucepan with the steeped chai water. Whisk in the pumpkin puree, maple syrup, vanilla extract, ground cinnamon, ground ginger, and ground nutmeg. Heat over medium-low heat, whisking constantly, until warm and pumpkin puree is fully incorporated (about 3-4 minutes). Do not let it boil.
  3. Whisk until smooth: Continue whisking until no lumps of pumpkin puree remain. The mixture should be smooth and velvety with a warm orange-brown color.
  4. Cool the mixture slightly: Remove from heat and let cool for about 5 minutes. Meanwhile, fill a tall glass with ice cubes.
  5. Pour over ice: Slowly pour the warm pumpkin chai mixture over the ice cubes in the glass.
  6. Stir and garnish: Stir well. Sprinkle a pinch of ground cinnamon on top. Optionally, garnish with a cinnamon stick or star anise.
  7. Taste and adjust: Taste and add more maple syrup or spices if desired.
  8. Serve immediately: Enjoy right away while the ice is fresh and flavors are bright.

Notes

Do not overheat oat milk to prevent separation. Whisk pumpkin puree gradually to avoid lumps. For stronger chai flavor, steep tea bags in 1/4 cup water instead of 1/2 cup. The pumpkin chai base can be stored in the refrigerator for up to 5 days.
