These Cozy Healthy Turkey and Veggie Meatballs are a lighter, healthier spin on classic comfort food. Made with lean ground turkey, grated zucchini and carrots, and simple pantry staples, they come together in about 30 minutes for a satisfying, nourishing meal.

  • 1 medium zucchini, finely grated (about 1 cup after squeezing out liquid)
  • 1 medium carrot, finely grated (about ½ cup)
  • ½ cup finely chopped onion (about half a medium onion)
  • 2 cloves garlic, minced
  • ½ cup plain breadcrumbs (use gluten-free if needed)
  • 1 large egg, lightly beaten
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)
  • 1 can (15 ounces) crushed tomatoes (for sauce, optional)
  • 1 tablespoon olive oil (for sauce, optional)
  • 2 cloves garlic, minced (for sauce, optional)
  • ½ teaspoon dried oregano (for sauce, optional)
  • ¼ teaspoon red pepper flakes (for sauce, optional)

Instructions

  1. Prep the vegetables: Grate the zucchini and carrot using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much liquid as possible. Set aside. Finely chop the onion and mince the garlic.
  2. Sauté the veggies: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2-3 minutes until translucent. Add the minced garlic and cook for 30 seconds. Then add the squeezed zucchini and grated carrot. Cook for 3-4 minutes, stirring occasionally, until tender and any remaining moisture has evaporated. Remove from heat and let cool for 5 minutes.
  3. Mix the meatball mixture: In a large mixing bowl, combine the ground turkey, cooled sautéed vegetables, breadcrumbs, beaten egg, grated Parmesan, dried oregano, dried basil, salt, and black pepper. Use your hands to mix gently until just combined. Do not overmix.
  4. Form the meatballs: Using slightly wet hands, roll the mixture into 1½-inch balls. You should get about 16-18 meatballs. Place them on a plate or cutting board.
  5. Cook the meatballs: Wipe out the skillet and heat the remaining 1 tablespoon of olive oil over medium heat. Carefully place the meatballs in the skillet, working in batches if needed to avoid overcrowding. Cook for 8-10 minutes total, turning occasionally, until all sides are golden brown and the internal temperature reaches 165°F (74°C).
  6. Make the sauce (optional): Remove the cooked meatballs from the skillet and set aside. In the same skillet, add 1 tablespoon olive oil and 2 minced garlic cloves. Cook for 30 seconds, then pour in the crushed tomatoes, dried oregano, and red pepper flakes. Simmer for 5 minutes, scraping up any browned bits. Return the meatballs to the sauce, coat well, and simmer for another 2-3 minutes.

Notes

Don’t skip squeezing the zucchini—it prevents soggy meatballs. Use a light hand when mixing to avoid dense meatballs. Wet your hands for easier rolling. Let meatballs rest 5-10 minutes before cooking. For a baked version, cook at 400°F (200°C) for 15-18 minutes, flipping halfway.
