Cozy German Apple Pancake – Easy Dutch Baby Recipe

  • ½ cup all-purpose flour
  • ½ cup whole milk, room temperature
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 medium apple, thinly sliced (Honeycrisp, Fuji, or Granny Smith)
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon
  • Pinch of nutmeg (optional)
  • Powdered sugar, for dusting
  • Maple syrup, for drizzling
  • Optional: whipped cream or vanilla ice cream for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Place a 10-inch cast iron skillet inside the oven while it preheats for at least 10 minutes.
  2. In a medium mixing bowl, whisk 3 room-temperature eggs until frothy and light yellow, about 1 minute.
  3. Add ½ cup milk, 1 tablespoon sugar, ½ teaspoon vanilla extract, and ¼ teaspoon salt. Whisk until combined.
  4. Sift ½ cup flour into the wet ingredients and whisk gently until smooth. Do not overmix; a few lumps are fine. Set aside.
  5. In a small bowl, mix 1 tablespoon brown sugar with ½ teaspoon cinnamon and a pinch of nutmeg. Set aside.
  6. Core the apple and slice into thin rounds or half-moons, about ⅛-inch thick. Do not peel.
  7. Carefully remove the hot skillet from the oven. Add 2 tablespoons unsalted butter and swirl until melted and sizzling.
  8. Arrange apple slices in a single layer in the skillet. Sprinkle the cinnamon-sugar mixture evenly over the apples.
  9. Immediately pour the batter over the apples. Do not stir.
  10. Return the skillet to the oven and bake for 18-22 minutes, until puffed and golden brown around the edges. Do not open the oven during the first 15 minutes.
  11. Remove from oven and let cool for 2-3 minutes. The pancake will deflate slightly.
  12. Dust generously with powdered sugar, drizzle with maple syrup, and cut into wedges. Serve warm.

Notes

Room temperature eggs and milk are crucial for puff. Preheat the skillet thoroughly. Do not open the oven door during the first 15 minutes of baking. Slice apples thinly (about ⅛-inch) for best texture. Serve immediately for maximum puff and crispness.
