  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt, plus more for the brine
  • 2 cups warm water (for brine)

Instructions

  1. Prep the Seeds: Scoop the seeds out of your pumpkin. Separate them from the stringy pulp as best you can. Rinse them in a colander under cold water.
  2. Brine the Seeds (Optional but Recommended): In a small bowl, dissolve 1 tablespoon of salt in 2 cups of warm water. Add the rinsed seeds and let them soak for at least 30 minutes, or up to 2 hours.
  3. Dry the Seeds Thoroughly: After brining, drain the seeds and pat them completely dry with paper towels.
  4. Preheat the Air Fryer: Set your air fryer to 300°F (150°C) and let it preheat for 3 minutes.
  5. Coat the Seeds: In a medium bowl, whisk together the melted butter, granulated sugar, ground cinnamon, and ¼ teaspoon of salt. Add the dried seeds and toss until they’re evenly coated.
  6. Air Fry the Seeds: Spread the coated seeds in a single layer in the air fryer basket. Air fry at 300°F (150°C) for 8-10 minutes, shaking the basket halfway through.
  7. Cool Completely: Transfer the hot seeds to a plate or baking sheet in a single layer. Let them cool completely.

Notes

Don’t skip the brine for extra crunch. Dry seeds thoroughly to avoid steaming. Watch closely after 8 minutes to prevent burning. Let cool completely for maximum crispiness.
