  • 1/2 cup mini marshmallows or about 8 large marshmallows, cut in half

  • Optional toppings: chopped nuts (walnuts or pecans), shredded coconut, caramel sauce

Instructions

  1. Prep the Bananas (5 minutes): Slice 2 ripe bananas lengthwise, leaving the peel on. Gently open the banana like a boat without cutting through completely.
  2. Add the Fillings (5 minutes): Spoon about 2 tablespoons of creamy peanut butter inside each banana. Sprinkle 1/4 cup of chocolate chips over the peanut butter, then add mini marshmallows on top. Add optional toppings if desired.
  3. Wrap the Banana Boats (2 minutes): Wrap each filled banana tightly in heavy-duty aluminum foil, sealing the seams.
  4. Cook Over Campfire or Grill (7-10 minutes): Place foil packets on hot embers or grill grates. Cook for 7-10 minutes, turning once halfway through until bananas are soft and fillings melted.
  5. Carefully Unwrap & Serve (2 minutes): Remove packets using tongs or heat-resistant gloves. Let cool slightly, unwrap carefully, and enjoy with a spoon.

Notes

Use firm but ripe bananas to avoid mushiness. Use heavy-duty foil to prevent leaks. Cook on hot embers, not direct flames, and turn once halfway through. For oven cooking, bake at 375Β°F (190Β°C) for 12-15 minutes. Leave foil slightly open at the end for extra toasted marshmallows. Avoid microwaving leftovers to prevent mushy bananas and rubbery marshmallows.
