This creamy, spiced pumpkin cream cold foam is a quick and easy copycat of the Starbucks favorite, made with simple pantry ingredients in under 5 minutes. It’s the perfect fall-inspired coffee topping that tastes better than the original.

  • 2 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1/4 cup whole milk (or oat milk for dairy-free)
  • 1 tablespoon heavy cream
  • 1 tablespoon maple syrup (or honey, simple syrup)
  • 1/2 teaspoon pumpkin pie spice (store-bought or homemade)
  • 1/4 teaspoon vanilla extract (pure vanilla)
  • Pinch of salt
  • For the Homemade Pumpkin Pie Spice Blend:
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/8 teaspoon cloves

Instructions

  1. Brew your coffee first. Use a strong cold brew or a double shot of espresso. Pour it over ice in your serving glass and set aside.
  2. In a small bowl or jar, combine 2 tablespoons pumpkin puree, 1/4 cup whole milk, 1 tablespoon heavy cream, 1 tablespoon maple syrup, 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon vanilla extract, and a pinch of salt. Whisk gently until the pumpkin is fully incorporated.
  3. Insert your milk frother into the mixture and turn it on. Keep the frother submerged and move it in small circles for about 30 to 45 seconds until the mixture doubles in volume and becomes thick and creamy, similar to a loose whipped cream.
  4. Check the consistency. The foam should hold its shape for a few seconds before slowly settling. If it collapses immediately, froth for another 15 seconds.
  5. Take your prepared iced coffee and slowly pour the cold foam over the back of a spoon to help it float on top, creating a layered look.
  6. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top for garnish.
  7. Serve immediately. Drink within 5 to 10 minutes for the best texture.

Notes

Use cold ingredients straight from the fridge for best foam. Don’t over-froth (stop at 30-45 seconds). Pour foam over the back of a spoon to keep it floating. Clean frother immediately after use to prevent dried pumpkin residue. The unfrothed mixture can be stored in the fridge for up to 2 days.
