These spooky spider deviled eggs are a fun and delicious Halloween appetizer. Made with simple ingredients, they are quick to prepare and guaranteed to be a crowd-pleaser.

Ingredients

Scale
  • 6 large eggs (room temperature)
  • 3 tablespoons mayonnaise (Hellmann’s or Duke’s preferred)
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • Salt and black pepper to taste
  • Paprika for garnish (optional)
  • 12 large black olives (pitted)

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan, cover with cold water by 1 inch. Bring to a rolling boil over high heat. Cover, turn off heat, and let sit for exactly 12 minutes.
  2. Ice bath: While eggs sit, prepare a bowl of ice and cold water. Transfer eggs to ice bath and cool for at least 5 minutes.
  3. Peel the eggs: Gently tap each egg to crack the shell, then peel under running cold water.
  4. Slice the eggs: Cut each egg in half lengthwise. Remove yolks to a mixing bowl. Place whites on a serving platter, cut-side up.
  5. Make the filling: Mash yolks with a fork until crumbly. Add mayonnaise, mustard, vinegar, salt, and pepper. Mix until smooth and creamy. Adjust seasoning to taste.
  6. Fill the eggs: Transfer filling to a piping bag or zip-top bag. Pipe a generous amount into each egg white half, mounding slightly.
  7. Create the spiders: Slice each olive in half lengthwise. Use one half for the spider body. From the other half, slice thin strips lengthwise for legs (8 per spider). Place body on filling, arrange legs on either side, pressing gently into filling.
  8. Garnish: Sprinkle paprika over eggs (not spiders) for color. Serve immediately or refrigerate.

Notes

For best results, use large, firm black olives. If spider legs keep falling off, use a tiny dab of mayonnaise as ‘glue’. Make ahead by keeping filling and whites separate until serving. The flavors improve after a few hours in the fridge.
