Best Light & Airy Ghost Meringue Cookies Recipe

These ghost meringue cookies are light, airy, and melt-in-your-mouth delicious. Perfect for Halloween, they are easy to make with simple ingredients and are naturally gluten-free and dairy-free.

  • 4 large egg whites, room temperature
  • 1 cup (200g) granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 cup semi-sweet or dark chocolate chips
  • Optional: 1 teaspoon coconut oil

Instructions

  1. Preheat your oven to 200°F (93°C). Line a baking sheet with parchment paper.
  2. Place room-temperature egg whites and cream of tartar in a clean, dry mixing bowl. Beat on medium speed until frothy and white, about 2-3 minutes.
  3. With the mixer running on medium-high speed, add sugar one tablespoon at a time, waiting 15-20 seconds between each addition.
  4. Once all sugar is added, increase speed to high and whip for 5-7 minutes until stiff, glossy peaks form. The meringue should stand up in a point and feel smooth between your fingers. Add vanilla extract in the last 30 seconds.
  5. Transfer meringue to a piping bag fitted with a round tip. Pipe 1.5-inch wide blobs onto the prepared baking sheet, pulling straight up to create a peak. Space them about 1 inch apart.
  6. Bake for 60-75 minutes, until firm to the touch and easily lifted off the parchment. They should not brown.
  7. Turn off the oven and crack the door open. Let meringues cool inside the oven for at least 1 hour.
  8. Once completely cool, melt chocolate chips in a microwave-safe bowl in 20-second bursts, stirring until smooth. Add coconut oil if needed to thin. Use a toothpick or small piping bag to dot on eyes and a mouth.

Notes

Meringues are sensitive to humidity; avoid making them on rainy or humid days. Ensure bowl and whisk are completely clean and grease-free. Do not overwhip meringue. Store in an airtight container at room temperature for up to 2 weeks. Do not refrigerate.
