  • 3/4 cup granulated sugar
  • 1/2 cup fresh orange juice
  • Zest of 1 large orange
  • 1 tablespoon fresh ginger, peeled and finely grated
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. Prep your ingredients: Wash the orange thoroughly, zest it (avoiding the white pith), then juice it to get 1/2 cup of juice. Peel the ginger with a spoon and grate it finely.
  2. Combine the sugar, orange juice, and water in a medium saucepan. Stir over medium heat until the sugar completely dissolves, about 2-3 minutes.
  3. Add the cranberries and stir. They will start to pop as they heat up.
  4. Stir in the grated ginger, orange zest, and a pinch of salt.
  5. Turn the heat to high and bring the mixture to a boil. Then reduce the heat to medium-low and let it simmer gently for 15-20 minutes, stirring occasionally, until the sauce thickens and the cranberries break down.
  6. Check for doneness: drag a spoon through the sauce; if it leaves a clear trail that doesn’t immediately fill back in, it’s ready. If too runny, simmer another 5 minutes.
  7. Remove from heat and let cool in the pan for about 10 minutes. Transfer to a serving bowl or jar. Serve warm, at room temperature, or chilled.

For a smoother sauce, use an immersion blender or potato masher. The sauce thickens as it cools, so don’t over-reduce. Make ahead for best flavorβ€”the ginger mellows overnight. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
