  • 1 large yellow onion, diced
  • 3 large celery stalks, diced

  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, finely chopped
  • ¼ cup fresh parsley, chopped
  • 2 cups chicken or vegetable broth, warmed
  • 2 large eggs, lightly beaten
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup dried cranberries (optional)
  • ½ cup toasted pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Spread bread cubes in a single layer on a large rimmed baking sheet. Bake for 10-12 minutes, stirring halfway, until dry and lightly golden. Set aside to cool.
  2. Melt 4 tablespoons butter in a large skillet over medium heat. Add onion and celery. Cook, stirring occasionally, for 8-10 minutes until soft and translucent. Season with a pinch of salt.
  3. Add minced garlic, sage, thyme, and rosemary to the skillet. Cook for 1-2 minutes until fragrant. Remove from heat and let cool slightly.
  4. In a very large mixing bowl, combine toasted bread cubes and cooked vegetable-herb mixture. Add fresh parsley and dried cranberries and pecans if using. Toss gently.
  5. In a separate bowl, whisk together warm broth, beaten eggs, remaining 2 tablespoons melted butter, salt, and pepper. Pour over bread mixture and fold gently until all cubes are moistened. Let rest for 10 minutes.
  6. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Transfer stuffing mixture to dish and spread into an even layer. Do not pack down.
  7. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for another 20-25 minutes until top is golden brown and crispy. For extra crispy edges, broil for 2-3 minutes.
  8. Let stuffing rest for 5-10 minutes before serving. Garnish with additional fresh parsley if desired.
